Easy Street Corn Salsa (Dip or Topping)

If you love Mexican street corn, you'll love this easy version! My Easy Street Corn Salsa has all those great flavors without the extra work.
It's made with sweet corn, jalapeños, red onion, cilantro, and cotija cheese, mixed with Greek yogurt and just a tablespoon of avocado oil mayo. The Greek yogurt adds a little extra protein, while the mayo gives it that creamy street corn flavor.
One of my favorite things about this recipe is how many ways you can use it. Serve it as a dip with tortilla chips, pita chips, or crackers, spoon it over grilled chicken or fish, or add it to tacos and burrito bowls.
Best of all, it takes no cooking and takes less than 10 minutes to throw together. You can serve it right away, but I like to let it chill for a bit so the flavors come together.
Perfect for parties, taco night, or just keeping in the fridge for an easy snack!
More Than Just a Dip! Simple ingredients, a healthier swap, and plenty of flavor. No perfection required!
INGREDIENTS:
1 can (15 oz.) sweet corn, drained, OR 1 bag (16 oz.) frozen sweet corn, thawed
1 cup plain 2% low-fat Greek yogurt
1 tbsp. avocado oil mayonnaise
¼ cup sliced jalapeños, chopped (adjust to your preferred heat level)
¼ cup red onion, finely chopped
1 small bunch fresh cilantro, chopped
¼ cup crumbled cotija cheese
1 tsp. garlic powder
1 tsp. Hippy Crap All-Purpose Seasoning
Salt and pepper, to taste
DIRECTIONS:
Drain the canned corn or thaw the frozen corn. Chop the jalapeños, red onion, and cilantro.
Add all ingredients to a medium mixing bowl.
Stir until everything is well-blended and evenly coated.
Serve immediately or cover and refrigerate for about an hour to let the flavors come together.
Hippy Tips:
Adjust the heat. Use mild or hot jalapeños depending on your preference. Start with less and add more if needed.
A little mayo goes a long way. Just one tablespoon of avocado oil mayo adds richness, while Greek yogurt keeps the salsa creamy and adds protein.
Want more street corn flavor? Try using fire-roasted corn or lightly charring your corn in a skillet before mixing.
Make it ahead. This salsa tastes even better after the flavors have had time to blend. Store covered in the refrigerator for up to 3–4 days.
