Hippy Cheesy Onion Crisps

These are zero-carb, high-flavor snacks that sneak in some extra protein from the cheese, making them a midlife-friendly win for when cravings hit but you don’t want the junk.

 

They’re crunchy, cheesy, super savory, and ridiculously easy to make—no deep frying, no guilt, just pure snack magic. Let them cool completely after baking so they harden into that perfect crisp (don’t rush it!).

 

Customize them however you want: plain garlic powder, ranch seasoning, just salk and pepper, or go full Hippy with a generous shake of Hippy All-Purpose Seasoning (Spoiler: we always do the Hippy way!).

 

So crunch away guilt-free. Your taste buds (and your joints) will thank you. 🧅🧀

  

INGREDIENTS

  • 1 large white onion (or 2 small onions), thinly sliced

  • 3 cups (1.5 packages) of shredded cheese of your choice – Parmesan, mozzarella, Swiss

  • Extra virgin olive oil spray

  • 2 tbsp Hippy All-Purpose Seasoning

  • 1 tbsp garlic powder

DIRECTIONS

  1. Preheat oven to 400 degrees.

  2. Slice onions thin, but not too thin – about 1/8” thick – keeping each slice of the rings together

  3. Line a large baking sheet with parchment paper.

  4. Spread the cheese evenly out on the baking sheet, starting from the center and spreading outward and keeping away from the sides of the pan.

  5. Place the onion slices directly onto the cheese, spacing about a half-inch apart.

  6. Lightly sprinkle the seasonings evenly and all over the top of the onions.

  7. Lightly spray each onion with a little EVOO.

  8. Bake for 15-20 minutes or until golden brown.

  9. Let them cool for at least 10 minutes, then slice them using a pizza cutter and be sure to leave some cheese around each onion "chip."

 

Tip: You can easily make a double batch or use a small onion for smaller chips.
