Hippy Slow Cooker Taco Soup

An easy high-protein soup packed with flavor and veggies

Super easy and perfect for those chilly nights, or as a straight-up comfort food, this soup embodies all the Tex-Mex flavors. If you’re feeling extra hippy and want to add some spice, add some chopped fresh jalapenos (or diced from a jar) or red pepper flakes.

 

You can also cook this in a large pot on your stove if you prefer or if you don’t have a slow cooker; just cook the ground beef in the large pot and dump everything else in and let it simmer on low for at least 20 minutes to let all the flavors to meld and come to life.

 

INGREDIENTS

  • 1 lb lean ground beef or ground turkey (93% lean or higher)

  • 6 cups beef or chicken unsalted bone broth

  • 1 tsp Extra Virgin Olive Oil (EVOO)

  • 2 tbsp garlic, minced

  • 16 oz 2% low fat cottage cheese

  • 1 bag sweet corn

  • 1 can unsalted black beans, rinsed (optional for those who don’t like beans)

  • 1 can diced tomatoes with chiles, with juice

  • 1 purple onion, chopped

  • 1 green pepper chopped

  • 2 tbsp Hippy All-Purpose Seasoning

  • 2 tbsp taco seasoning, or one packet of taco seasoning

  • Chopped jalapenos, optional

  • 1 tbsp red pepper flakes, optional

 

DIRECTIONS

  1. Turn heat to medium high and in a pan, add EVOO and 1 tbsp of the minced garlic. Cook until the garlic becomes fragrant, about 1 minute.

  2. Add the ground meat and cook about 5-6 minutes, breaking apart and until no longer pink.

  3. Add the onion and green pepper to the meat and mix and cook together until the onions and pepper are soft, about 5 minutes. Drain or use a paper towel to roll in the pan and soak up the fat from the meat.

  4. Add the cottage cheese to the meat mixture and stir until it melts down and turns creamy. It looks weird at first—but I promise, it works.

  5. Once the cottage cheese is incorporated, dump the meat mixture and everything else in the slow cooker and mix well to combine.

  6. Cook on high for 4-6 hours or low for 6-8 hours.

  7. Garnish with chopped green onions, 2% shredded cheddar, sliced avocado, and/or sour cream.

  8. Can serve with tortilla chips (we prefer Siete) for added crunch or to use for dipping.
