My Healthy Food System: How I Meal Prep Without Spending All Day in the Kitchen

Healthy Eating Doesn't Have to Be Complicated. It's Not Just About Meal Prep. It's About a Food System.

This is my realistic approach to meal prep, so I don't have to spend hours in the kitchen every week. One thing I've learned over the years is that healthy eating usually isn't about willpower—it's about convenience.
When life gets busy, we tend to grab whatever is easiest. If healthy foods require a lot of chopping, cooking, and prep work while less healthy options are ready to go, it's easy to see which one wins.
When people hear the words "meal prep," they often picture spending an entire Sunday cooking dozens of meals and filling the fridge with perfectly portioned containers. If that works for you, great. And sometimes, when you know you have a busy week ahead, prepping full meals and putting them in the freezer or fridge for when needed is necessary and a definite time and stress-saver.
But on a regular weekly basis, that's never been my style.
Instead, I focus on preparing a handful of basic ingredients that make almost every meal easier to throw together throughout the week. That's why I created my own food system.
By spending a little time prepping a few simple ingredients ahead of time, I save time and energy on virtually every breakfast, lunch, dinner, and snack. Other than the actual cooking time for a recipe, most meals take less than 10 minutes to pull together because much of the work is already done.
I don't spend hours meal prepping. I don't portion out every meal. I don't follow a strict meal plan. I simply prep a handful of ready-to-use staples in the fridge to make healthier choices more convenient, and eating healthy becomes the easiest option.
And honestly, it's very Hippy Crap. 🙂
The Healthy Convenience Foods You'll Almost Always Find in My Fridge
1. Chopped Onions
If you've followed Hippy Crap for any amount of time, you already know onions show up in almost every recipe I make.
Every Sunday, I usually chop two or three onions (either yellow or red) and store them in a glass container.
It’s a simple, small step that saves time all week long and makes it easy to toss into:
breakfast scrambles
skillet meals
soups
casseroles
cooked meats (i.e., taco meat, ground turkey, ground chicken, etc.)
slow cooker recipes

2. Hard-Boiled Eggs
Hard-boiled eggs are one of my favorite grab-and-go protein sources. I typically boil a dozen eggs at the beginning of the week.

They're great for:
quick breakfasts
snacks
salads

3. Washed and Cut-up Veggies
One of the easiest ways to waste produce is leaving it untouched in the refrigerator, because nobody wants to prep it later. Having them cleaned and prepped makes it much more likely they'll get eaten throughout the week.
As soon as I get home from the grocery store, I wash and chop as many vegetables as possible.
This often includes:
cucumbers
carrots
celery
broccoli
bell peppers
cherry tomatoes
4. Sweet Potatoes
Sweet potatoes are one of my favorite healthy carbohydrates, as they're filling, good for you, versatile, and easy to reheat. I'll often roast a large batch or keep pre-cut cubes ready to cook.
They work well in:
breakfast bowls
meal prep bowls
skillets
salads
side dishes
5. Cooked Ground Meat
This is probably one of my favorite meal prep shortcuts – and it could be ground beef, ground turkey, ground chicken or even ground chicken sausage.
A batch of seasoned ground meat already cooked makes healthy meals come together in minutes:
taco salads
power bowls
breakfast scambles
burrito bowls
wraps
quesadillas
loaded sweet potatoes

6. Homemade Seasoning Blends
One reason I created Hippy All-Purpose Seasoning was that I got tired of grabbing multiple spice jars every time I cooked. I experimented with several different recipes before landing on the perfect blend of what it is now.
I keep each of the blends below ready to go because they make it easier and make the dishes more flavorful:
taco seasoning
ranch seasoning
everything bagel seasoning
7. Cottage Cheese & Greek Yogurt
These are two staples that are always in our refrigerator. I also use them as healthier substitutes for sour cream, mayo, and some cheeses, and they’re great as they naturally add more protein.
They add protein and creaminess to:
dips
sauces
dressings
smoothies
egg salad
casseroles
8. Homemade Sauces & Dressings
A good sauce can completely change a meal and help keep meals from feeling repetitive.
I admit, I am a sauce girlie – I can’t stand anything being dry, so I often keep one or two homemade sauces in the fridge, such as:

9. Shredded Cheese
I prefer buying blocks of cheese and shredding them myself. And this shredder is ah-mazing:
It usually tastes better, melts better, and avoids some of the anti-caking ingredients and chemicals found in pre-shredded varieties.
Having cheese ready makes it easy to add flavor and protein to meals throughout the week.
10. A Big Batch of Something
Almost every week, I make one large batch of something that can be eaten multiple times, and gives easy options when schedules get hectic.

Healthy eating doesn't require complicated meal plans or spending your entire Sunday in the kitchen.
A little preparation goes a long way.
Which is why I don't try to prep every meal. Instead, I focus on prepping ingredients.
When healthy ingredients are washed, chopped, cooked, and ready to go, healthy meals become much easier to make. Plus, by keeping a few healthy convenience ingredients stocked and ready, you'll spend less time cooking, waste less food, and make it easier to throw meals together.
It's not about perfection. It's about making the healthier choice the convenient choice, thus making healthy eating feel simple enough to do consistently.
And honestly, that's one of the biggest secrets I've found to eating well consistently.
