If you have ripe bananas sitting on your counter, this bread is the perfect way to use them! Made with almond flour, cottage cheese, and naturally sweetened with ripe bananas and a touch of raw honey, this healthier banana bread is soft, tender, and incredibly flavorful.

 

Unlike traditional banana bread, this recipe is gluten-free, lower in sugar, and higher in protein, making it a delicious option for breakfast, a snack, or even dessert. It's easy to customize with your favorite mix-ins like walnuts, blueberries, dark chocolate chips, flaxseed, or chia seeds, so every loaf can be a little different.

 

Whether you're meal prepping for the week or simply craving something homemade, this banana bread is the kind of recipe you'll reach for whenever you have ripe bananas on hand that you don’t want to just throw away.

 

INGREDIENTS

Makes 1 loaf (12 slices) or 12 standard muffins

  • 2 ripe bananas, mashed

  • 3 eggs

  • 1/2 cup cottage cheese

  • 3 tbsp raw honey (adjust to taste if you want sweeter)

  • 2 tsp sugar free vanilla syrup (like Torani)

  • 2½ cups almond flour

  • 1 tsp baking soda

  • ½ teaspoon of salt

  • 2 tsp cinnamon (or more to taste)

 

Optional add-ins:

  • Chopped walnuts or pecans

  • Fresh or dried blueberries, blackberries, or cranberries

  • Chopped dates or raisins

  • 1 tbsp flaxseed or chia seeds

  • 1 tsp of your favorite spices, like pumpkin spice or nutmeg

  • Dark chocolate chips

  • 1 scoop of your fave protein powder (vanilla is great in this bread)

 

DIRECTIONS

For a Loaf

  1. Preheat oven to 350 degrees. Line a 9x5-inch loaf pan with parchment paper and lightly coat with olive oil or cooking spray.

  2. In a large mixing bowl, mash the bananas with a fork. Add the eggs, cottage cheese, honey, and vanilla syrup, then whisk until well combined.

  3. Add the almond flour, baking soda, and cinnamon. Stir until everything is incorporated. Don't worry if you still see small pieces of cottage cheese, as they will melt into the bread as it bakes.

  4. Fold in any optional mix-ins and fold into the batter, making sure everything is combined.

  1. Preheat the oven to 350°F. Line a 12-cup muffin pan with paper liners and lightly coat the liners with olive oil or cooking spray.

  3. Add the almond flour, baking soda, and cinnamon. Stir until everything is incorporated. Don't worry if you still see small pieces of cottage cheese, as they will melt into the bread as it bakes.

  4. Fold in any optional mix-ins and fold into the batter, making sure everything is combined.

 

Bake the Loaf

  1. Pour the batter into the prepared loaf pan and spread it evenly. Bake for 50–60 minutes. If the top begins browning too quickly after about 30 minutes, loosely tent it with aluminum foil and continue baking until a toothpick inserted in the center comes out clean.

  2. Let the bread cool at least 10 minutes before transferring to a wire rack to cool completely before slicing.

 

Bake the Muffins

  1. Divide the batter evenly among the muffin cups, filling each about ¾ full. Bake for 20–25 minutes, or until the tops are lightly golden and a toothpick inserted into the center comes out clean.

  2. Let the muffins cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

 

Tips

  • Try a flour blend: For a lighter texture, substitute 1¼ cups almond flour + 1¼ cups all-purpose flour.

  • Use maple syrup instead of honey for a different flavor or if you prefer.

  • Swap in vanilla extract if you don't have sugar-free vanilla syrup.

  • Boost the protein by adding a scoop of your favorite vanilla protein powder.

  • The bread can be stored in an airtight container for 3 days, 5 days in the fridge or in the freezer for 2 months
