Hippy High-Protein Creamy Cheese Sauce (No Flour)

If you’re looking for a creamy, comforting cheese sauce that’s higher in protein, gluten-free, low-carb, and made with simple ingredients, this one is a game-changer.

 

Instead of flour or heavy cream, this sauce uses cottage cheese as the base, which blends into a smooth, velvety sauce that’s packed with protein and flavor.

It’s perfect for tossing with protein pasta or veggie noodles for a healthier mac and cheese, but it’s also amazing poured over chicken, roasted vegetables, potatoes, or even smoked sausage. You could even use it as a queso-style dip!

 

Once you try it, you may never go back to boxed mac and cheese again.

 

INGREDIENTS

  • 10 oz protein pasta (we like Brami)

  • 1 tbsp real butter

  • 1 cup 2% cottage cheese (small curd is best)

  • ¼ cup half and half (can use milk if you don’t have half & half), or more if desired

  • 1 small onion, chopped

  • ½ cup grated Parmesan cheese

  • 1 tsp Hippy All-Purpose Seasoning

  • 1 tsp (or more if you like) garlic powder

  • 2% shredded cheddar or cheese of choice, if desired

 

DIRECTIONS

  1. Cook the pasta according to instructions.

  2. While the pasta is cooking, saute the onions in butter and Hippy All-Purpose Seasoning.

  3. In a food processor or blender, combine the cottage cheese, Parmesan cheese, sautéed onions, garlic powder, and half-and-half, and blend until smooth and creamy. If the sauce is too thick, you can add a little bit more half-and-half/milk until it reaches your desired consistency.

  4. When the pasta is done, drain and pour back into the pot, and let stand for about 5 minutes to cool (this prevents the sauce from separating).

  5. Gently fold in the cheese sauce and incorporate until the pasta is completely covered. You can sprinkle in some more Parmesan or shredded Sharp cheddar and fold it into the pasta as well.


TIP: Once you've mixed the sauce with the pasta, you can reheat it on low on the stove.
