Creamy Hippy Spinach Dip

This is a universal winner in our family and perfect for parties and get-togethers as it’s ALWAYS a crowd-pleaser—and one of those recipes you’ll find yourself making on repeat. It’s creamy, flavorful, and super versatile, so you can easily tweak it based on what you have or what you’re craving.
Serve it as a dip with pretzels, pita chips, tortilla chips, crackers, sliced veggies, put it in a pita or a wrap, or even spread it on a rice cake for a quick, satisfying snack. It also doubles as a delicious topping—try it smothered over chicken for an easy dinner, or you can even stuff it in chicken breasts and bake.
And if you prefer it warm and melty instead of chilled, spread it evenly in a baking dish, top with some parmesan cheese, and bake at 350 for about 10-12 minutes.
Fair warning: You might want to do a quick spinach check in the mirror after, as nobody likes spinach pieces stuck in their teeth. 😉

INGREDIENTS
2 pkgs (about 10 oz) frozen chopped spinach, thawed
1-1/2 cups organic Greek yogurt
2 tbsp avocado oil mayo (optional, for extra creaminess—can substitute with more Greek yogurt or sour cream for less calories)
1 bundle green onions, chopped
1 tbsp Hippy All-Purpose Seasoning
2 tbsp Ranch seasoning (or more to taste)
2 envelopes vegetable soup mix (such as Knorr’s)
1 tsp garlic powder
Splash of half & half (if needed for consistency)
DIRECTIONS
Thaw spinach completely. Once thawed, squeeze and pat dry thoroughly to remove as much moisture as possible.
Add the spinach to a large bowl, then mix in all the remaining ingredients until well combined.
You can serve immediately, but for the best flavor, cover and throw it in the fridge for at least an hour to let everything meld together.
TIP 1: If you’re feeling adventurous and want a bit more twang, add some more black pepper, red pepper flakes, or a dash of Frank's Red Hot sauce (or hot sauce of your choice)
TIP 2: If you like some added crunch, you can throw in some chopped water chestnuts and/or a half-cup of chopped purple onion
