If Buffalo chicken dip shows up at a party, I'm probably standing somewhere close to it. 😂 It's creamy, cheesy, spicy, and basically everything you want in a game-day appetizer. So naturally, I had to give it a little Hippy Crap makeover.
This Hippy High-Protein Buffalo Chicken Dip keeps all that cheesy Buffalo chicken goodness but swaps the traditional cream cheese base for blended cottage cheese and Greek yogurt. Once blended, the cottage cheese gets super smooth and creamy, and when you mix it with shredded chicken, buffalo sauce, mozzarella, Hippy All-Purpose Seasoning, and green onions, you'd never know it's hiding in there.
And this one is easy peasy. Use a rotisserie chicken and there's barely any prep—blend, mix, top with cheese, and bake until hot and bubbly. Done.
I love serving it with a mix of veggies and something crunchy so everyone can make it work for them. Celery, carrots, mini peppers, tortilla chips, crackers—there are no dipping rules around here.
It's perfect for football season, game-day parties, holiday gatherings, or just one of those weekends when you want something warm, cheesy, and delicious.
And the best part? Nobody needs to know there's cottage cheese in it. Once it's blended smooth and loaded with buffalo sauce and melted cheese, all you get is creamy, cheesy Buffalo chicken goodness.
High protein? Yep. Easy? Absolutely. Still tastes like the Buffalo chicken dip everyone actually wants to eat? That's the whole point.
INGREDIENTS
2 cups shredded cooked chicken — rotisserie chicken works great, or use 2 cooked and shredded chicken breasts
1 cup 2% low-fat cottage cheese
¼ cup low-fat Greek yogurt
1 cup buffalo sauce (I like Frank’s RedHot)
1 cup shredded mozzarella cheese, divided
1 tbsp Hippy All-Purpose Seasoning
1 tsp garlic powder
½ cup chopped green onions, divided
DIRECTIONS
Preheat oven to 375°F and lightly spray an 8x8-inch or similar-sized baking dish with extra virgin olive oil or avocado oil spray.
Add the cottage cheese and Greek yogurt to a blender or food processor. Blend until completely smooth and creamy.
In a large bowl, combine the shredded chicken, blended cottage cheese mixture, buffalo sauce, ½ cup mozzarella, Hippy All-Purpose Seasoning, garlic powder, and about ¼ cup of the chopped green onions. Stir until everything is well combined and the chicken is evenly coated.
Give it a taste and adjust the buffalo sauce depending on how spicy and saucy you like your dip.
Spread the Buffalo chicken mixture evenly into the prepared baking dish.
Sprinkle the remaining ½ cup mozzarella evenly over the top.
Bake uncovered for 20–25 minutes, or until the dip is hot and bubbly and the cheese is completely melted. For a little extra color on top, broil for 1–2 minutes at the end—just keep an eye on it!
Sprinkle the remaining green onions over the top and serve warm.
Hippy Tips
Blend that cottage cheese! This is what gives you a smooth, creamy dip without chunks of cottage cheese.
Rotisserie chicken makes this ridiculously easy. Grab one at the grocery store, shred it, and you're halfway done.
Adjust the heat. Buffalo sauces vary, so start with less if you're sensitive to spice. You can always add more.
Want it cheesier? Add extra mozzarella or mix in a little shredded cheddar or pepper jack.
Make it ahead. Assemble the dip, cover, and refrigerate, then bake when you're ready to serve. You may need to add a few extra minutes to the baking time if it's going into the oven cold.
Make it your own. Add diced jalapeños, extra green onions, crumbled blue cheese, or a little ranch seasoning.
Drizzle some Homemade Hippy High-Protein Ranch Dressing or bleu cheese dressing on top of the finished dip.
Serve with tortilla chips, celery sticks, carrots, mini sweet peppers, pita chips, crackers, toasted pita, pretzels, corn chips, or sliced cucumbers.
