Easy & Creamy Hippy Sausage Veggie Skillet (One-Pan Wonder)

Another family favorite that's ridiculously easy, super versatile, and sneaks in those anti-inflammatory veggies—perfect for busy midlife/RA days when you need something quick, nourishing, and low-effort.
The prep is minimal: just slice the sausage and veggies, toss everything in one skillet with olive oil, garlic, and Hippy All-Purpose Seasoning. The magic happens as the cottage cheese melts down into a creamy, dreamy sauce that coats everything without feeling heavy. No separate pots, minimal cleanup, and you can customize endlessly—add broccoli, zucchini, bell peppers, cauliflower, green beans, asparagus, or whatever's in the fridge. Skip the potatoes for a low-carb version, or keep 'em for heartier satisfaction (sweet potatoes add extra anti-inflammatory beta-carotene!).

INGREDIENTS
1-2 packages of smoked sausage, depending on how much you want to make (we LOVE the HEB Pepperjack and beef sausage), cut into ½-inch rounds
Generally, 1 package will be good for 2-3 people, but if 4+ people or if you want more leftovers for meals during the week, you’ll probably want to use two packages
2 tbsp Extra Virgin Olive Oil (EVOO)
2 tbsp garlic, minced
1 yellow or red onion sliced into half-rounds
1 green, yellow and/or red pepper, sliced
Veggies of choice: baby broccoli florets, cauliflower, zucchini, squash, green beans, even asparagus (fresh or frozen)
Potatoes of choice: 6 small red potatoes, cut into fourths, OR 2 sweet potatoes, cut into slices then cut into fourths, OR 3 baking potatoes cut into slices then cut into fourths
NOTE: You can also used precut, cubed sweet potatoes
2 tbsp Hippy All-Purpose Seasoning (or more if you'd like)
1 cup 2% cottage cheese (small curd is best)
1/2 cup shredded Sharp cheddar, if desired
Red pepper flakes for a kick, if desired

DIRECTIONS
Heat a skillet to 320 degrees and add the olive oil and minced garlic, and cook the garlic for about a minute until fragrant.
Add the onions and peppers and cook until onions become translucent.
Add the potatoes, veggies, and seasonings and stir to combine. Cover and cook for about 15 minutes, stirring occasionally, to make sure the potatoes cook through.
Add the sausage and stir all together and combine.
Gently stir in the cottage cheese, rolling to combine with the sausage and veggies. Don’t worry, the curds will melt down into a creamy sauce.
Turn the heat down to 250 and cover, simmer on the skillet for about 10 minutes to allow the cottage cheese to melt and for the flavors to meld
Uncover and sprinkle with the shredded cheese, if desired
