An easy dish the family will love, this Hippy High-Protein Ground Beef & Potato Skillet is hearty, comforting, and made entirely in one pan for easy cleanup. Lean ground beef, tender potatoes, onions, garlic, and bell peppers simmer together in a savory beef broth before being finished with cottage cheese and melted sharp cheddar for a cheesy twist.

 

The cottage cheese blends right into the sauce, adding extra protein and creating a rich, creamy texture without making the dish heavy. It's classic comfort food made a little healthier—perfect for busy weeknights, meal prep, or whenever you need a satisfying dinner on the table in about 40 minutes.

 

Serve it with a simple green salad or your favorite roasted vegetables for a complete meal.



INGREDIENTS

  • 1 tbsp extra-virgin olive oil or cooking spray

  • 1 lb ground beef (93%)

  • 1 onion, diced

  • 4 minced garlic cloves

  • 1 bell pepper, chopped (green, red, or yellow, whichever you have on hand, or all three!)

  • 1-1/2 tbsp Hippy All Purpose Seasoning, divided

  • 1 tsp garlic powder

  • 2 tbsp tomato paste or 4 tbsp tomato sauce

  • 1 tbsp Dijon mustard

  • 1 cup beef bone broth

  • 4 small potatoes, or 1 large potato, or 1 large sweet potato, cut into ½-inch pieces

  • ½ cup low-fat cottage cheese

  • ½ cup grated sharp cheddar cheese

  • ¼ cup parsley flakes

DIRECTIONS

  1. Heat a large skillet over medium-high heat and add the EVOO or cooking spray. Add the beef, breaking apart into crumbles. Add the minced garlic and 1 tbsp Hippy All-Purpose Seasoning and mix, continuing to break apart as it cooks.

  2. When the meat is halfway cooked, add the chopped onion and bell pepper, mix, and continue to cook until the beef is browned and the onion and peppers are softened.

  3. Stir in salt, ½ tbsp of Hippy All-Purpose Seasoning, tomato paste/sauce, and mustard, and mix to incorporate. Add the beef bone broth and potatoes and stir to combine. Increase the heat to high and bring to a simmer, then reduce the heat to low.

  4. Add the cottage cheese and mix to combine, cover with a lid, and stirring occasionally, cook for about 20 minutes, until the potatoes are tender and the liquid has mostly evaporated.

  5. Remove the lid and stir the skillet well. Sprinkle the shredded cheddar cheese evenly over the top, cover again, and cook for about 5 minutes, or until the cheese is melted. Remove from the heat and garnish with parsley before serving.

 

Tips

  • Garnish with chopped onions or chives for extra flavor.

  • You can use beef or chicken stock or broth if you don’t have bone broth on hand.
