Looking for a fresh, easy appetizer that's ready in minutes? These Creamy Hippy Spinach Cucumber Bites are crisp, crunchy, and packed with flavor. Ready in less than 10 minutes, cool cucumber "boats" are stuffed with Creamy Hippy Spinach Dip and finished with a sprinkle of Parmesan cheese for the perfect no-cook snack or party appetizer.
Whether you're hosting a summer cookout, holiday gathering, baby shower, birthday, or game day party, these bite-sized appetizers are always a hit. They're light, refreshing, incredibly easy to make, and a delicious way to enjoy more veggies without sacrificing flavor.
We like to use our own Creamy Hippy Spinach Dip because it’s higher in protein and homemade, but if you’re short on time, your favorite store-bought spinach dip works great, too!
INGREDIENTS
2-4 large cucumbers (each cucumber makes about 4–6 bite-sized boats, depending on its size)
1-2 cups Creamy Hippy Spinach Dip (or store-bought if you prefer)
Grated Parmesan cheese, optional

DIRECTIONS
Wash the cucumbers and cut each one in half lengthwise.
Using a small spoon, gently scoop out the seeds to create a shallow channel, leaving enough cucumber intact so the boats hold their shape.
Spoon the Creamy Hippy Spinach Dip into each cucumber half, spreading it evenly from end to end.
Slice each filled cucumber into 4–6 bite-sized pieces, depending on the size of the cucumber.
Arrange on a serving platter and sprinkle with grated Parmesan cheese, if desired.
Serve immediately or refrigerate until ready to enjoy.
Tips
Garnish with chopped fresh dill, parsley, or chives for extra flavor.
Sprinkle with Everything Bagel Seasoning for an added delicious crunch.
Add bacon crumbles for a fun twist.
For the freshest texture, assemble just before serving.
