Loaded Hippy Egg Salad: Make It Your Way!

If you love egg salad but like switching up the flavors and ingredients depending on your mood, this one’s for you.
Around here, egg salad is less of a strict recipe and more of a customizable base you can make your own every single time.
There are so many different ways to make egg salad — kind of like potato salad — and honestly, I’ve made countless versions over the years. Some days I want it tangy and loaded with pickles and mustard, other days I go for creamy with avocado, dill, or Everything Bagel seasoning. There’s really no wrong way to make it.
It’s also incredibly versatile when it comes to serving:
Scoop it with crackers or veggies
Pile it onto toast or a rice cake
Make a sandwich or wrap
Serve it over lettuce
Or bulk it up with diced chicken for extra protein
And if you meal prep, this is one of the easiest things to keep stocked in the fridge for quick lunches, snacks, or easy high-protein meals throughout the week.
I always start with the same simple base: hard-boiled eggs, avocado, and Greek yogurt or cottage cheese, then build from there depending on what sounds good.
BASE INGREDIENTS:
2–3 hard-boiled eggs (or more for a larger batch)
½ avocado (or whole avocado for larger batches)
½–1 cup nonfat Greek yogurt or cottage cheese
Salt and black pepper, to taste
Splash of lemon juice

Mix and match your favorites:
Diced onion
Relish
Bacon bits
Diced pickles
Chopped celery
Diced jalapeños
Avocado
Cottage cheese
Shredded cheese of choice
Raisins
Crushed peanuts or walnuts
Flavor & Seasoning Ideas
Customize the flavor profile however you like:
Salt + pepper
Dijon or yellow mustard
Avocado mayo or regular mayo
Everything Bagel seasoning
Garlic powder
Dill
Italian seasoning
Lemon or lime juice
Dill pickle seasoning

DIRECTIONS:

Once cooled and peeled, add the eggs, avocado, Greek yogurt or cottage cheese, lemon juice, and desired seasonings to a bowl.
Using a fork, mash the eggs and avocado together until everything is combined.
Stir in any mix-ins you’d like.
Taste and adjust seasonings as desired.
Store in an airtight glass container in the fridge.
Tips:
For extra protein, add diced chicken or extra egg whites.
Want it creamier? Add a little more Greek yogurt, cottage cheese, or avocado mayo.
For crunch, add celery, onions, or crushed nuts right before serving.
Everything Bagel seasoning and dill pickle seasoning are both game changers.
Best served chilled after the flavors have had time to meld together.
