This simple garden salad is one of those recipes that never goes out of style. It’s crisp, refreshing, low calorie, and perfect to keep stocked in the fridge for easy lunches, snacks, or a fresh side with dinner.

 

Loaded with crunchy cucumbers, juicy tomatoes, and purple onion tossed in a light vinaigrette, it’s the kind of salad that somehow tastes even better after it sits and the flavors meld together.

 

It’s also incredibly versatile. Serve it as-is, top it with crumbled feta, or add grilled or shredded or cubed chicken to turn it into a quick, healthy meal.

INGREDIENTS

  • 2 large cucumbers (or 6–8 mini cucumbers), sliced and quartered 

  • 1 package cherry tomatoes, quartered

  • 1 purple onion, diced

 

Dressing Options

  • 4 tbsp of your favorite no-sugar Italian dressing (or more to taste) 

Option 2: Homemade Vinaigrette

  • 3 tbsp extra virgin olive oil

  • 1 tbsp apple cider vinegar

  • 1 tsp Italian seasoning

  • 1 tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp black pepper

DIRECTIONS

  1. Chop and mix all veggies into a large bowl

  2. If using homemade dressing, whisk all vinaigrette ingredients together in a small bowl until combined.

  3. Pour dressing over the veggies and mix well until evenly coated.

  4. Chill before serving: Transfer to a glass container or cover the bowl and refrigerate for at least 1 hour to let the flavors meld together.

 

Tips & Variations

  • Add crumbled feta cheese for extra flavor

  • Toss in grilled or shredded chicken for a complete meal

  • Want it sweeter? Add ½ tsp monk fruit or stevia to the dressing

  • Love extra dressing? Simply double the vinaigrette recipe
