Hippy Garden Crunch Salad (Easy Cucumber Tomato Salad Recipe)

INGREDIENTS
2 large cucumbers (or 6–8 mini cucumbers), sliced and quartered
1 package cherry tomatoes, quartered
1 purple onion, diced
Dressing Options

4 tbsp of your favorite no-sugar Italian dressing (or more to taste)
Option 2: Homemade Vinaigrette
3 tbsp extra virgin olive oil
1 tbsp apple cider vinegar
1 tsp Italian seasoning
1 tsp garlic powder
½ tsp onion powder
½ tsp black pepper

DIRECTIONS
Chop and mix all veggies into a large bowl
If using homemade dressing, whisk all vinaigrette ingredients together in a small bowl until combined.
Pour dressing over the veggies and mix well until evenly coated.
Chill before serving: Transfer to a glass container or cover the bowl and refrigerate for at least 1 hour to let the flavors meld together.
