Smoked sausage, protein pasta, diced tomatoes, fresh spinach, and a creamy, cheesy sauce come together in about 30 minutes for a comforting dinner the whole family will love.

 

The cottage cheese melts right into the sauce, adding extra protein and creating a rich, velvety texture without making the dish feel heavy. Best of all, everything cooks in one pan, so cleanup is easy, and dinner is on the table with minimal effort.


It’s a quick and easy meal that is perfect for busy weeknights when you want something comforting, filling, and homemade.


 

INGREDIENTS:

  • 2 tbsp extra virgin olive oil

  • 1 lb sliced smoked sausage

  • 8 oz protein pasta of choice (preferably smaller like bow tie)

  • 1 cup diced onion

  • 4 cloves minced garlic

  • 1 tsp sea salt

  • 1 tsp black pepper

  • ½ tsp red pepper flakes (optional for added heat)

  • 1 tsp Hippy All-Purpose Seasoning

  • 14 ounces diced tomatoes

  • 1 bag frozen mixed vegetables

  • 2 cups chicken bone broth

  • ½ cup half & half, milk or heavy cream

  • 1 cup shredded cheddar cheese

  • ½ cup cottage cheese (small curd works best)

  • 2 tbsp sliced green onions for garnish, optional

 DIRECTIONS:

  1. Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the sliced smoked sausage and diced onion. Stirring occasionally, cook until the sausage is lightly browned and the onions have softened, about 5-6 minutes.

  2. Stir in the minced garlic, sea salt, black pepper, crushed red pepper flakes (if using), and Hippy All-Purpose Seasoning.

  3. Add the uncooked protein pasta, diced tomatoes (with juice), mixed vegetables, bone broth and half and half. Stir well to combine.

  4. Bring to a gentle boil. Reduce the heat to low, cover, and simmer for 12-15 minutes, stirring occasionally, until the pasta is tender.

  5. Remove the skillet from the heat and stir in the cottage cheese until smooth and fully incorporated.

  6. Add the shredded cheddar cheese and stir until melted and creamy. Cover the skillet for about 5 minutes to allow the cheese to melt completely and the sauce to thicken slightly.

 

Tips:

  • Add mushrooms or bell peppers with the onions for even more vegetables.

  • Substitute turkey or chicken smoked sausage for a leaner, lower-calorie option.

  • Add a few splashes of your favorite hot sauce for added heat.

  • In place of the mixed vegetables, stir in 2–3 cups of fresh spinach after removing the skillet from the heat. Cover for 2–3 minutes until wilted, then stir into the creamy sauce for an easy way to add extra veggies.

  • If the sauce thickens too much after sitting, stir in a splash of chicken broth or milk before serving.
