If you grew up eating classic pea salad at summer cookouts and family gatherings, you'll love this healthier version. Hippy Creamy Pea Salad has all the creamy goodness of the original but swaps the mayo for protein-packed nonfat Greek yogurt, giving it a lighter, fresher twist without sacrificing flavor.

 

Sweet peas, sharp cheddar cheese, and crunchy red onion are tossed in a tangy, creamy dressing that's perfect for barbecues, potlucks, picnics, holidays, or an easy make-ahead side dish. It comes together in just minutes and tastes even better after chilling, making it an ideal recipe for entertaining or meal prep.

 

INGREDIENTS

  • 4 cups frozen peas (1 bag)

  • ½ cup nonfat Greek yogurt

  • 1 tbsp monk fruit (or sugar, if you don’t want to substitute)

  • 2 tsp organic apple cider vinegar

  • 2 tsp lemon juice

  • ¼ tsp Hippy All-Purpose Seasoning

  • 1/3 cup purple onion, chopped (about two handfuls)

  • ¾ cup (4 oz) cubed sharp cheddar cheese

  • Pinch of black pepper and salt

DIRECTIONS

  1. In a large bowl, whisk together the Greek yogurt, monk fruit (or sugar), apple cider vinegar, lemon juice, Hippy All-Purpose Seasoning, salt, and pepper until smooth and well combined.

  2. Add the frozen peas (they don't need to be fully thawed), chopped red onion, and cubed cheddar cheese. Gently stir until everything is evenly coated in the dressing.

  3. Cover and refrigerate for at least 1 hour before serving, allowing the flavors to meld together. Give the salad a quick stir before serving.


Tips

  • The longer it chills, the better it gets.

  • Forgot to thaw the peas? No problem. They'll thaw quickly as the salad chills in the refrigerator.

  • Add more crunch by mixing in shredded carrots, diced celery, chopped bell pepper, or water chestnuts.

  • Love bacon? Stir in a few slices of cooked, crumbled bacon or bacon bits just before serving.

  • Try Colby Jack, Pepper Jack, or Swiss cheese for a fun twist.
