If you’re looking for an easy comfort food dinner that practically cooks itself, this Hippy Slow Cooker Beef & Broccoli Stew is just that - packed with tender beef, hearty potatoes, mushrooms, onions, and broccoli, all simmered in a rich, savory broth until everything is perfectly tender.

 

Made with simple pantry ingredients and minimal prep, this is the kind of meal that's perfect for busy weekdays, lazy Sundays, or meal prepping for the week ahead. Just toss everything into the slow cooker, let it do the work, and come home to a warm, satisfying dinner the whole family will love.

 

Serve it just as it is, or pair it with a slice of crusty bread to soak up every last bit of the delicious gravy.


 

INGREDIENTS

  • 1 lb grass-fed stew beef

  • 2 cups beef bone broth

  • 1 medium onion, chopped

  • 5 oz mushrooms, sliced

  • 3 medium potatoes, cut into 1-inch cubes

  • 1 (12 oz) package frozen baby broccoli florets (or 1 large head fresh broccoli, cut into florets) 

  • 2 tbsp Hippy All-Purpose Seasoning

  • 1 tbsp garlic powder

  • 1 tsp onion powder

  • 1 tsp dried thyme

  • 1 tsp smoked paprika

  • 1 tsp Worcestershire sauce (or 2 tsp coconut aminos for a soy-free option)

  • ½ tsp black pepper

  • Sea salt, to taste

 

Optional for a Richer Gravy

  • 1 tbsp tomato paste

  • 1 tsp Dijon mustard

 

DIRECTIONS

  1. Add the beef, potatoes, onion, mushrooms, bone broth, Hippy All-Purpose Seasoning, garlic powder, onion powder, thyme, smoked paprika, Worcestershire sauce (or coconut aminos), black pepper, tomato paste, and Dijon mustard (if using) to your slow cooker.

  2. Stir everything together until the seasonings are evenly distributed.

  3. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until the beef is fork-tender and the potatoes are cooked through.

  4. During the last 30 minutes of cooking, stir in the broccoli. Cover and continue cooking until the broccoli is tender but still bright green.

  5. Taste and adjust with additional salt and pepper if needed before serving.

 

Sidenote: I usually make this recipe from scratch because it gives me more control over the ingredients and sodium, but if all you have is an au jus or onion soup packet, use it! Healthy cooking is about making the best choice for your lifestyle—not about perfection.

 

Tips

  • If you need a quicker version, swap the garlic powder, onion powder, thyme, paprika, Worcestershire sauce, tomato paste, and Dijon for 1 packet of au jus gravy mix or 1 packet of onion soup mix. It's a convenient option when you're short on time.

  • Want a thicker gravy? Mix 1 tablespoon cornstarch with 1 tablespoon cold water until smooth, then stir it into the slow cooker during the last 20–30 minutes of cooking. Repeat if you'd like an even thicker gravy.

  • Fresh broccoli can be substituted for frozen; add it during the last 20–30 minutes to keep it tender without becoming mushy.

  • Make it your own. Add carrots, celery, or green beans for even more vegetables.

  • Leftovers are even better the next day and are perfect for meal prep.

  • Serve over rice, cauliflower mash, or egg noodles if you'd like an even heartier meal.
