Savory Anti-Inflammatory Power Bowl

Since being diagnosed with rheumatoid arthritis, this has been my go-to for breakfast and/or lunch every week. Every Sunday, I make this "mishmash" and store it in the fridge in an airtight glass container, then throughout the week, measure out 1.5-2 cups, throw it in a bowl and reheat in the microwave for a meal during the week, generally breakfast. I often top it with some organic sauerkraut (great for gut health) or slice up half of an avocado.

You can customize as you want and use lean ground beef or ground chicken if you prefer.
INGREDIENTS
1 tsp Organic Extra Virgin Olive Oil (EVOO)
1 lb ground turkey (organic, 93%) or ground chicken sausage (I use HEB’s - H-E-B Natural Chicken Breakfast Sausage - Regular - Shop Sausage at H-E-B)
2 garlic cloves, minced
1 small onion, chopped
1 package (12 oz) frozen cauliflower rice (I use HEB’s - H-E-B Frozen Riced Veggie Original Cauliflower Rice - https://www.heb.com/product-detail/h-e-b-frozen-riced-veggie-original-cauliflower-rice-12-oz/2233669Shop Broccoli, cauliflower & cabbage at H-E-B)
1 package (16 oz.) sweet potatoes, cubed (I use HEB’s - H-E-B Fresh Sweet Potato Cubes - Shop Potatoes & carrots at H-E-B)
1 package (12 oz) fresh broccoli florets (I do cut up the larger pieces into smaller ones), OR 1 head of broccoli, broken and cut into small florets, OR one (1) package (16 oz) of frozen baby florets (I use HEB's - H-E-B Fresh Steamable Broccoli Florets - Shop Broccoli, cauliflower & cabbage at H-E-B)
¼ cup beef bone broth
2 tbsp Hippy All-Purpose Seasoning
DIRECTIONS
In a large pan, add olive oil and the minced garlic over medium-high heat and cook until the garlic is fragrant, about one minute.
Add the ground turkey or ground chicken sausage and 1 tbsp of the Hippy Seasoning and mix, breaking apart as it cooks.
Add the chopped onion and mix in with the meat, continuing to cook until the meat is no longer pink. Wipe up any remaining fat with a paper towel.
Add the frozen cauliflower rice, broccoli and sweet potatoes and remaining Hippy Seasoning and mix everything together until well combined.
Add the beef bone broth and mix all together, breaking up any burnt pieces in the bottom of the pan (they add extra flavor!).
Reduce heat to medium-low, cover and cook to steam for about 10 minutes, stirring occasionally, until the broccoli and potatoes are soft.
Serve in a bowl and top with whatever you want – sliced avocado, hot honey, siracha sauce, etc.
